Ackee and Smoked Salmon Bagels

Origin of dish:  Exotic

Ingredients (for 2people) :

    -1/2 tin of Grace Ackee (or any other tinned Ackee)
    -Knob butter
    -Salt & pepper
    -200g smoked salmon, chopped
    -2 plain bagels

Method:

Heat olive oil in frying pan over a high heat.

Add the drained ackee, season with salt and freshly ground black pepper and sauté until lightly caramelised.

Tip: Do not stir or over cook, as the ackee will become very soft.

Turn off the heat; add the salmon to warm it through.

Meanwhile, toast the bagel halves, arrange on plates and top with the ackee & salmon mixture.

Sprinkle with the black pepper and serve immediately.
