Aubergine Rolls Stuffed with Chives, Asparagus and Feta

Ingredients (for 4 people) :


Method:

Cut each aubergine length ways into 6 slices.

Cook in a large frying plan, brushing one side of each slice with combined oil, Gourmet Garden Basil, Chives and Garlic.

Boil or steam asparagus as to personal preference until just tender, refresh in cold water.

Place one spear of asparagus, a little cheese and some chopped tomatoes and olives on each slice of aubergine.

Roll up and secure with a toothpick.
