Beetroot & Horseradish Hummus Dip with No-No Corn Sesame Flatbreads

Preparation time: 10 minutes
 
Ingredients (for 6 people) :

    1 x 400g/14oz can chickpeas, drained and rinsed
    250g cooked beetroot
    ½ tsp salt
    Juice ½ lemon
    1 garlic clove, crushed
    2 tbsp tahini
    2 tsp ground cumin
    100ml extra virgin olive oil
    2 tbsp creamed horseradish
    Finely chopped parsley to garnish
    No-No Corn Sesame Flatbreads for dipping

Method:

Place all the ingredients (except the basil leaves, balsamic vinegar and No-No Italian Herb Flatbreads) into a bowl and mix to combine.

Leave the mix for at least 1 hour for the flavours to infuse.

When ready to serve, top your No-No Italian Herb Flatbread with the tomato mixture, tear a few basil leaves and scatter over the No-No Flatbread.

Then drizzle with a few drops of balsamic vinegar.
