Ingredients (for 2-3 people) :
-Lime, FreshMethod: Finely chop the coriander and the jalapeños, red onions and tomatoes.
-1/4tsp White pepper
-1 Large or 2 Medium Avocados
-2tbsp red Onions, diced
-2tbsp jalapeños fresh, seeds removed, finely diced
-2tbsp Coriander, Finely Chopped
-1/3 cup of Tomatoes Fresh, Diced
Add the lime juice, salt, white pepper to your bowl and mix thoroughly.
Cut the avocado in half and remove the internal stone. Remove the pulp and mash with two forks; make sure that you do not over mash.
The guacamole should still have small chunks of avocado visible to make a chunky paste.
Add the onions, jalapeños and coriander. Mix well.
Add tomatoes to guacamole and gently fold until mixed thoroughly.
Transfer the guacamole to a chilled serving bowl. Garnish with tomato wedge and serve with corn tortilla chips.
