Method:

Preheart the oven to 180C.

This might sounds quite intimidating but for a souffle you need to start with a roux. - Melt the butter in a pan and whisk together the flour until it becomes crumbly.

Continue to gently whisk while adding the warmed milk until your mixture becomes a paste. Around the consistency of a paste.

Add the cheese, anchovy paste and salt and pepper and whisk together until melty.

Take off the heat and rest for 5 minutes.

When cool enough to touch add the egg yolks and a small teaspoon of warm water and whisk.

Prepare 4 ramekins by rubbing the edges with butter and setting them aside to cool in the fridge.

In a seperate bowl, whisk the egg whites until they become stiff peaks.

Fold 1/4 of the egg whites into the mixture and mix.

Gently, using a wooden spoon, fold the remaining egg whites into the mixture.

Pour the mixture into the ramekins & place them on a baking tray. Next the fun part, blow torch the tops quickly until lightly brown and place in the oven for 10-12 minutes.

Serve.
