Chocolate, Cranberry and Pistachio

Ingredients (for 6 people) :


Method:

Start by getting your teeth into those cranberries.

Stew the cranberries with the sugar and water on a low heat until soft (approx 7-10 minutes) but not collapsed and set aside to cool.

Coarsely grate or finely chop the chocolate.

Whip the cream with the icing sugar until light, fluffy and voluminous.

Blitz the pistachios in a food processor until they resemble fine breadcrumbs. Add the digestives and continue to process until they are the same.

Mix the melted butter into the nut/biscuit mixture.

To assemble, put about 11/2 tablespoons of the nut/biscuit mix into each glass, followed by a single layer of cranberries, then about 1 1/2 tablespoons of the whipped cream and finally a good layer of the grated chocolate so that the cream is well covered.

Chill for at least an hour before serving.
