Chopped Broccoli and Quinoa Side Salad

Ingredients (for 2 people) :


Method:

Start by blanching the the broccoli and refresh in iced water and set aside.

Next cook the quinoa in vegetable stock according to the packet instructions or until all of the liquid has disappeared.

Chop the broccoli and hazelnuts to quite a fine dice. Combine and quickly heat the broccoli, quinoa and hazelnuts in a pan.

Add balsamic, olive oil and lemon to taste. Season and serve with cress on top.
