Method:

Start by boiling the spinach in hot water for 20 seconds then quickly running under cold water to blanch them. This will make sure they aren't wilted & tasteless/

Divide the spinach equally between 4 ramekins or mugs if you would prefer.

Next mix the cheese & cream together - holding back a little of the parmesan for later - and cook in a saucepan over a low heat to make a thick sauce. Make sure you stir continually!

Pour the mixture equally over the spinach-y ramekins.

Crack one egg on top of each pot and season with salt and pepper.

Place in a preheated oven at 140 degrees C for 20 minutes.

When the egg turns white, take out the pots, grate a little parmesan and place under the grill for 2 a maximum of minutes.

Serve.
