Curried Prawns

Origin of dish:  Exotic
Type of cooking:  Hob
 
Preparation time: 10 minutes
Cooking time: 15 minutes
 
Ingredients (for 4 people) :

    -1 tbsp Flora Buttery or regular butter
    -1 onion chopped
    -1–2 cloves of garlic finely chopped
    -2–3 tsps Madras curry powder
    -1/4 chicken stock cube
    -400g tiger prawns, ready to eat
    -1 small pak choi, shredded
    -2 tbsps Elmlea Whipping
    -1 tbsp mango chutney
    -1 tsp garam marsala
    -Handful of fresh chopped coriander

Method:

Heat the Flora or regular butter in a non-stick frying pan on medium heat and gently fry the onion and garlic until softened.

Add the curry powder and fry for 1 minute.

Dissolve the stock in 400ml of boiling water and add to the pan.

Add the prawns and pak choi, and heat thoroughly.

Next stir in the Elmlea Whipping, mango chutney and garam marsala, and heat through.

Add the chopped coriander leaves and serve with rice and naan bread.
