Method:

For the Hollandaise sauce:
In a bowl whisk 2 egg yolks, lemon juice & vinegar.

In a small saucepan melt the butter on a very gentle heat until foamy.

As soon as the foam starts to reduce, slowly trickle in the egg mixture whilst whisking.

Continue whisking until the butter and mixture is fully combined & add a pinch of salt to season.

To cook the perfect poached egg:
A great trick to make sure the egg stays together is to place the whole egg (shell on) in simmering water for ten seconds. Take it out and place into cool water until cool enough to touch.

Then crack it open and place into simmering water & cook for approximately 3 minutes. Add a few drops of vinegar into the water to bind the egg too.

Whilst your egg is cooking place your muffins in the toaster.

When everything is cooked and toasted, plate up your muffins, lie your ham on top, follow with the poached eggs and lavish on the sauce!
