Italian Strawberry Cheesecake

Ingredients ( for 8 people) :


Method:

Place the Amaretti biscuits in a food processor to make crumbs.

Mix with the butter and press into the base of a 20cm round spring form tin. Leave to chill in the fridge.

Meanwhile, whisk the soft cheese and sugar together then whisk in the vanilla and mascarpone.

Chop half the strawberries and stir in. Spoon into the tin and level the top with a spoon.

Slice the remaining strawberries and arrange on top of the cheesecake and chill for 1-2 hours.

Remove from tin and garnish with lemon zest.
