Minted Greek Cheese, Pea and Potato Salad

Ingredients (for 4 people) :


Method:

Place the potato chunks in a pan of cold salted water, bring to the boil and cook for 15-20 minutes until tender but still holding shape. Drain and allow to cool.

Bring a second pan of water to the boil and throw in the peas. Cook for two minutes so the peas are still very sweet and bright green. Drain and run the colander under the cold tap for a moment to cool the peas.

In a bowl, mix the lemon juice, olive oil and mint sauce until the dressing is smooth and blended together.

In a large plastic lidded container gently toss together the potato, peas and cheese. Drizzle with the dressing and serve.
