Moroccan Chickpea Burgers with Halloumi

Ingredients (for 4 people) :

    For your burger:
    -2 tbsp olive oil
    -1 small onion, chopped
    -1 clove garlic
    -1 tsp cumin seeds
    -150g chargrilled aubergines, drained and chopped
    -2 tbsp freshly chopped mint
    -1 tbsp harissa paste
    -50g fresh breadcrumbs
    -grated zest and 1 tablespoon lemon juice
    -2 tablespoons freshly chopped coriander
    -2 x 400g chickpeas, rinsed and drained well
    -1 egg
    -salt and freshly ground black pepper

    For the rest:
    -4 Yamas! Halloumi Burger Slices
    -4 large buns
    -Crisp salad leaves
    -4 tablespoons tomato salsa

Method:

Start of by heating a little oil in a frying pan and cook the garlic, onion and cumin seeds for 3 minutes - or until soft.

Once nicely cooked, tip the contents of the frying pan into a food processor along with the remaining burger ingredients, season with salt and then pulse until combined.

Next take out your mix and divide into 4 to make your burgers then leave to chill in the fridge for half an hour.

Preheat the grill to high. Brush the top of the burgers with oil and place onto a non-stick baking tray.

Cook the burgers for 6 minutes on one side, carefully turn over and cook the other side for 4 minutes.

Next the best bit - place a halloumi burger slice on top of each burger and grill for a further 3-4 minutes or until the cheese has started to golden.

Serve in your rolls with lettuce and salsa! Enjoy!
