Ingredients (for 4 people) :Method: Preheat the oven to 200C, gas mark 6.
Place the sweet potato on a baking tray and toss in 1 tbsp oil and 2 tsp harissa paste, roast for 15-20 minutes until golden and tender.
Whisk the remaining oil with the lemon zest and juice and remaining 1 tsp harissa.
Toss together the sweet potato, pine nuts, prawns, dressing and baby leaf salad.
For extra flavour, try adding some pitted green olives.
