Savoury Seedy, Carrot & Thyme Muffins

Ingredients (for 12 muffins) :


Method:

Preheat the oven to 200c or gas mark 6. Grease and line a 12 hole muffin tin with baking parchment.

Sift the flour and baking powder into a bowl and sprinkle in the sugar.

Pour the eggs, almond milk, yogurt, and oil into another bowl mix together well.

Now fold the flour mixture, salt, carrots pumpkin seeds and thyme into the egg mixture and give it a couple of stirs but don’t over stir.

Spoon into the prepared muffin tins and sprinkle with the sunflower and sesame seeds.

Bake for between 20 -25 minutes. To make sure they are cooked to perfection, insert a skewer into the center and if it comes out clean they are done! Put on a wire rack to cool.
