Seafood with Fennel, Apple and Celeriac Salad

Ingredients (for 4 people) :


Method:

Finely slice the fennel, apple and celeriac into thin strips. Place the strips into a bowl and stir in the yoghurt and mustard, then season with salt and pepper.

Toss the seafood in the oil and lemon zest, generously season with salt and pepper.

Heat a griddle pan and place one piece of prawn, salmon and scallop on a wet wooden skewer.

Cook the seafood skewer for 1-2 minutes, turning halfway so all sides are cooked.

Serve the fish alongside the salad.
