Smoked Haddock Breakfast Eggs Florentine

Ingredients (for 2 people) :


Start by boiling water with a splash of vinegar for poaching the eggs.

Pour a pint of milk into a separate pan and place the haddock into the pan and heat for approximately 8-10 minutes bringing to a simmer.

Once this is ready remove the haddock and save the milk.

Next, cut 2 think slices from the loaf and toast.

Chop 3/4 of the chive and mix in with the yoghurt along with 75ml of the milk & season.

Poach the eggs for approximately 2 1/2 minutes.

Wilt the spinach gently in a frying pan.

Serve the spinach on the toast topped by flaked haddock and poached egg - top with the yoghurt dressing.
