Summer Berry Pudding

Origin of dish:  UK

Ingredients (for 4 people) :

    -800g mixed berries (roughly half should be raspberries)
    -juice of 1 orange
    -4 tsp Truvia (or other low calorie sweetener)
    -7-8 slices of stale white bread

Method:

Add the berries to a saucepan along with the sugar and orange juice. Over a low heat cook until the juices start to run from the fruit, this should take around 4-5 mins.

Using 4 small pudding moulds or 1 large pudding basin as a guide, cut out a round piece of bread to make the base for your puddings.

Cut the remaining bread into strips and lay around the edges of the bowl/s patching up any gaps with bread.

Fill in with the berries and some of the juice, making sure to reserve a little. Add the bread circles to the top and place in the fridge with a saucer on top and something to weigh the pudding down with.

Leave in the fridge overnight. Just before serving, turn out the puddings onto a plate and pour over the reserved juices.
