Tomato and Buffalo Mozarella Skinny Rustica

Ingredients (for 2 people) :

    -250g wholemeal flour
    -tsp instant yeast (from a sachet or tub)
    -3/4 tsp salt
    -100ml lukewarm water
    -olive oil
    -100ml fresh tomato sauce or passata
    -basil leaves, a handful torn
    -50g buffalo mozarella
    -5 or 6 sundried tomatoes

Method:

Mix the flour, yeast and salt. Make a well and pour in the water and 1 tbsp olive oil.

Bring together with a wooden spoon until you have a soft dough. Knead well until smooth and elastic.

Shape into balls weighing about 110g and leave in a warm place to rise – roughly about 2 hours. Once they almost double size, the dough will be ready to use.

Heat oven to 240C / gas mark 8. Stretch the dough with the palm of your hand until is about 5mm thick, smooth over tomato sauce, a few leaves of basil, 50g of buffalo mozzarella and some sun dried tomato.

Bake in the hot oven for ten minutes until gold and crispy.

Serve with a green salad.
