Tomato and Mozzarella Salad with Basil

Preparation time: 10 minutes
 
Ingredients (for 2 people) :

    -2 large ripen tomatoes, sliced
    -1 buffalo mozzarella
    -25g picked basil leaves
    -75ml extra virgin oil
    -Sea Salt and coarse black pepper
    -Baby basil leaves to serve
    -Extra virgin olive oil to serve

Method:

Start by chopping the tomatoes into thin, vertical slices. Put the tomatoes and picked basil leaves into a bowl and drizzle with olive oil, season with the salt and black pepper.

Transfer onto a plate on top of the baby basil leaves. Place the Mozzarella on top. Season again.

Enjoy!
