Tomato, Mozzarella, Pesto & Caperberry Tart

Ingredients (for 4 people) :

    - Ready rolled puff pastry
    - 3 tbsp pesto
    - 1 large vine tomato, cut into slices
    - 1 mozzarella ball, cut into slices
    - 2-3 Fragata Caperberries, cut into halves
    - 1 beaten egg (to glaze)
    - Basil leaves to garnish

Method:

Unroll the pastry sheet onto a baking tray.

Spread the pesto evenly, leaving a border for the pastry to rise. Brush border with beaten egg.

Place the tomato and mozzarella slices evenly onto the pastry, ensuring a good coverage. Scatter caperberries over the top.

Bake for 20 minutes at 200 degrees, until borders have risen and are golden in colour.

Scatter with basil leaves to garnish. For a lunch box treat, leave to cool and take a slice to work.
