Turnip Cake with Sunny Side Up Egg

Method:

Grate the turnip or daikon, then steam the cured bacon for around 10-20 minutes until soft.

Chop the bacon into small bits – the smaller the better. Add a little oil to a pan and fry the bacon for a couple of minutes, then add all the turnip or daikon.

The turnip/daikon will give out water so it shouldn't stick to the bottom of the pan – it will start to braise in its own water. Cook for around 30 minutes, mixing regularly. Keep an eye on it in case all the water evaporates – if does pour in a little water to top it up.

Once all the turnip/daikon is cooked, mix in rice flour and salt and stir thoroughly. Pour the mixture into a mold – a terrine mold would work very well.

steam the mixture for another 30 minutes. Take out the mold and let it cool down before putting into the fridge to set. Once the mixture has set you can take it out and slice.

Put a generous amount of oil into a pan, and when it’s hot put the turnip cake in and fry on both sides until nice and brown and crispy. Fry an egg and place on top.
