Ingredients (for 4 people) :


Method:

Cook the broccoli and peas for 5 minutes, drain and immerse in icy water and drain again. Arrange over lentils.

Chop up the tomato, avocado, cucumber and goat’s cheese and mix together and scatter over peas and broccoli.

Top with seeds and a good amount of ground black pepper and dress with Cotswold Gold and lemon juice or Cotswold Gold Drizzle.

If you make a large amount cover left over’s and leave in fridge – it's even tastier when the flavours have melded together.
