Warm Potato and Crab with Crisp Jersey Royals and a Plum Tomato Salsa

Method:

Select 3 large Jersey Royals, was and rub until clean.

Heat a pan of salted water on the hob and bring to the boil and pop 2 of the 3 jersey royals in.

Once cooked peel the skin and mash whilst hot with a potato masher or ricer and put to the side.

Slice the remaining Jersey Royal very thinly and place between two layers of non stick matting or silicon paper.

Drizzle with a little olive oil and place on a baking sheet.

Place another baking sheet on top to keep the potato flat whilst cooking.

Bake in the oven at 140ºC for approx 12-14 minutes or until golden brown and crispy.

Place the plum tomatoes in boiling water for approx 10 seconds. This will allow you to peel the tomato with ease and then chill in ice cold water.

Quarter the tomatoes and de-seed and cut the remainder of the flesh into dice.

Heat the olive oil in a pan on the hob, add diced shallot and tomato and season.

Then boil the broad beans and French beans for 4 mins until just tender.

Peel the broad beans and slice the French beans into rings and add to the tomato and olive oil.

Take the mashed Jersey Royals, add mayonnaise, crab meat and dill and lightly mix.

Sandwich this mixture between the two crisp pieces of Jersey Royal and top with the mixed cress.

Dress with the tomato and bean salsa.
