Nem (Spring Rolls)

Origin of dish:  China

Preparation time: 40 minutes
Cooking time: 30 minutes
 
Ingredients (serves 6):


Method:

1-Saok mushrooms in warm water to rehydrate.

2-Cook noodles briefly in boiling water.

3-Cook the meats, season.

4-Chop meat, slice and add mushrooms and noodles. Wash and slice carrot, then add to mixture.

5-Add beaten egg and fish sauce and stir well.
If mixture seems dry, add another egg.

6-Soak spring roll wrapper briefly in lukewarm water and lay out on a clean cloth.

7-Put a tablespoon of filling near the top edge of the wrapper and roll tightly, folding in ends.

8-Once all mixture is used up, fry nems in hot oil in an chip pan or deep frying pan, in batches of 3. Try not to let them stick together, cook until golden.

9-Serve hot or cold as a snack or starter.
Advice: This may seem time-consuming, but the result will be worth it! Your first attempt may be difficult, but it will get easier with practice...
