Ingredients (serves 6):Method: 1- 'shuck' the oysters (or get your fishmonger to do it for you)... Open them, saving the juice. Loosen the oyster from the half-shell, so it can be eaten more easily.
2- Preheat the grill. Line the grill pan with a layer of crushed metal foil (to prevent the shells tipping over).
3- Cut each slice of streaky bacon into 3.
4- In a small bowl, mix the garlic and parsley.
5- Garnish the oysters with a piece of bacon and top with the parsely.
6- Into each shell pour a little of the oyster juice and white wine. Splash a drop of tabasco on top.
7- Grill 4 inches from the heating element, for 3 minutes, or until the oysters begin to curl at the sides. Serve immediately.
