Chocolate and mascarpone water ice

Ingredients (serves 4):


Method:

Chop the chocolate into pieces and melt in the microwave.
Bring 25cl of water to the boil in a pan and add 100g sugar.
Remove from the heat, add the melted chocolate to your syrup and mix with a wooden spoon. Leave to cool.
Pour into a freezer container (not an ice tray) and freeze for 4 hours. Every now and then mix and scrape the ice up for a marbled effect.
Whip the mascarpone with the rest of the sugar and milk until you get a light creamy mousse.
Just before serving, cut up the biscuits, place them in four glasses and drizzle with whisky. Add the water ice, top with the mousse, decorate with grated chocolate and enjoy!
