Ingredients (serves 10):
1 pound Bulk pork sausage or ground
1 small Green bell pepper; chopped
1 small Onion; chopped (1/4 cup)
2 teaspoons Chili powder
2 cans Tomato sauce; (18 oz)
1 can Pinto beans; undrained
1 can Whole kernel corn; drained
2 cups shredded sharp Cheddar
Corn Bread Topping; (see
Sour cream; chopped lettuce
; sliced ripe olives,
; if desired
1.Heat oven to 400.
2.Cook sausage, bell pepper and onion in 10-inch skillet over medium heat, stirring occasionally, until pork is no longer pink; drain.
3.Stir in chili powder and tomato sauce.
4.Pour into ungreased rectangular baking dish, 13x9x2 inches. Spread with beans and corn; sprinkle with cheese.
5.Prepare cornbread topping and pour evenly over cheese.
6.Bake 25 to 35 minutes or until bubbly and topping is golden.
7.Serve with sour cream, lettuce and olives.
