Origin of dish:  North America
Type of cooking:  Hob
 
Preparation time: 15 minutes
Cooking time: 40 minutes
 
Ingredients (serves 4):


Method:

Dice vegetables, crush garlic.
Heat oil in large pan and brown pork.
Add onions, garlic and green pepper.
Stir and season with black pepper and cayenne pepper.
Add 200ml stock, cover and simmer on a low heat for 20 minutes.
Add rice and rest of stock.
Stir well, cover and simmer for a further 10 minutes.
Add prawns and simmer for 10 minutes, uncovered.
Whilst simmering, brown cashew nuts in another pan, without oil.
Put nuts to one side and add ham, cut into strips.
Serve rice with nuts, ham and slices of lime.
Garnish with parsley.
