Peach and mint soup

Origin of dish:  France
Type of cooking:  Hob
 
Preparation time: 5 minutes
Cooking time: 10 minutes
 
Ingredients (serves 4):

    6 yellow peaches
    1 bottle of white wine
    200g sugar
    fresh mint

Method:

1. Peel the peaches
2. Heat the white wine and sugar in a saucepan
3. When it comes to the boil, add the peaches and 15 chopped mint leaves and simmer for 5 minutes
4. Refrigerate for 12 hours
5. Serve chilled with a mint leaf for garnish

Advice: Recommended drinks: Champagne or white wine (eg Sauterne)
