Method:

Slice your (cooled) sponge cake in two, fill with jam and whipped cream and sandwich.
Advice: You can also use melted chocolate, buttercream, chestnut filling or any sweet filling you like for this recipe.
Apricot jam makes a refreshing change from strawberry.
