Laura's meatballs with tomato sauce

Origin of dish:  UK
Type of cooking:  Oven
 
Preparation time: 20 minutes
Cooking time: 40 minutes
 
Ingredients (serves 4):

    Meatballs:
    mince of choice (I use pork)
    1 finely chopped onion
    2 cloves of garlic
    seasoning
    half teaspoon of chilli powder
    egg (not always required)

    Tomato sauce:
    2/3 tins of chopped tomatoes (depending on how saucy you like it!)
    black pepper/pinch salt to your taste
    garlic - as much or little as you like!
    chilli - finely chopped if you want it with a kick
    beef Oxo cube
    1 pepper - any colour, yellow are pleasing on the eye and have sweeter taste to work with the tomatoes.

Method:

Meatballs:
1-Add mince, finely chopped onions and seasoning (including spice) all in a mixing bowl. Combine by hand.

2-Add egg to mixture if it's a bit dry.

3-Shape into medium-sized balls and set to one side (this will determine the amount of servings!)

Tomato sauce:
1-Open 2/3 of tomatoes and add to an oven-proof dish.
2-Add all other ingredients and give a quick mix.
3-Pop in uncooked balls, pushing them down until nearly covered by sauce.
4-Place cover on dish.
5-Place in oven for 40-45 minutes on about 200ºC.

Serve with rice, jacket potatoes, vegetables or crusty warm bread
Advice: Add any veg you like to the tomato sauce, I often use up any mushrooms, celery, carrots etc that need using!

Dont forget to grate some cheese on the finished dish!!!

This dish is really quite low in fat, depending on the mince used. Ensure that any fat on the top of the sauce when cooking time over is skimmed off.
