Chocolate mousse

Ingredients (serves 6):


Method:

Make the night before, or at least six hours in advance.

Break the chocolate and melt gently, over a low heat. Add cream and mix together. Remove from heat.

Separate eggs, whip yolks and add to chocolate mixture.

Whip whites until stiff, then add vanilla sugar. Add to mixture.

Pour into dessert dish, or individual ramequins, chill for at least six hours before serving.
Advice: Make sure you mix the egg whites very carefully into the mixture.
Add some strawberry halves to decorate.
