Mint custard

Origin of dish:  UK
Type of cooking:  Hob
 
Preparation time: 15 minutes
Cooking time: 10 minutes
 
Ingredients:

    1/2 litre milk
    A few drops vanilla essence
    Spring of fresh mint leaves
    6 egg yolks
    100g caster sugar
    A few spoons of cornflour

Method:

Mix the milk, mint leaves and vanilla essence in a pan and heat without bringing to the boil.

Beat the yolks, sugar and cornflour until creamy and add the milk to this mixture. Pour through a sieve into the pan and heat until the custard thickens.
