Ingredients (serves 8):Method: Peel the courgettes and boil them.
Mix the eggs, flour, oil and milk in a bowl.
In another bowl, mash the courgettes and goat's cheese together, mix and add to the other bowl.
Add the yeast, salt and grated cheddar. Mix well and bake in a cake tin for 40-50 min, pricking with a knife to see if the cake is ready.
