Yogurt cheese cake

Preparation time: 30 minutes
Cooking time: 50 minutes
 
Ingredients (serves 10):

    250grams Digestive biscuits crushed
    125gr butter melted
    250gr cream cheese
    250grcream whipped
    1/2 cup sugar
    3cups 150gr each yogurt of your choice
    or you can altanate it by using
    1/3cup lemon juice
    1tsp lemon rind

Method:

1- Lightly grease a 20cm/9inch rpingform cheesecake pan with melted butter. Line base with baking paper.
Combine the crushed biscuits with melted butter. Press mixture into the bottom & a bit up the sides of pan. Refrigerate the base while you prepare the filling.
2- In a seperate (large) bowl beat the cream cheese, sugar, yogurt or lemon until mixture is smooth (less than 5mins if using an electric mixer)Than fold in the cream and pour over the base and refrigerate until set (approx 6hrs but overnight is preferable).

Advice: You can decorate the top with fresh stawberries or compote.
