Artichokes alla parmigiana

Ingredients (serves 4):


Method:

Wash the artichokes and remove the outer leaves so all that's left are the hearts. Cut into thin slices and blanch them for 5 minutes in boiling salted water.

Drain them then put in a salad bowl with the juice of both lemons and cover them with cold water for 10 minutes.

Next, drain and carefully dry them before putting them in the flour and browning them for 5 minutes on each side in a bit of olive oil. Drain them on kitchen paper.

Cut the mozzarella into thin slices. Arrange the artichoke slices on a pie plate, add a little salt and sprinkle with grated parmesan.

Cover with mozzarella slices then continue to alternate between mozzarella slices and all the other ingredients. Finish with the artichokes and sprinkle all with parmesan.

Put in the oven at 200°C (Gas Mark 6-7) for 30 to 40 minutes. Stop cooking once the cheese has melted and the top has started turning gold.
