Aubergine curry

Origin of dish:  India
Type of cooking:  Hob
 
Preparation time: 10 minutes
Cooking time: 90 minutes
 
Ingredients (serves 4):

    4 aubergines
    1 large onion
    1 teaspoon curry powder
    salt
    oil

Method:

Peel and cut the aubergines into slices. Soak them in coarse salt for 1 hour.

Chop the onion and brown it in a bit of oil in a pan.

Add the curry powder and aubergine slices.

Leave the aubergines to turn gold in colour. Lower the heat and leave to cook for about 45 minutes, stirring from time to time.
