Bread pudding

Ingredients (serves 4):

    150ml milk (best with whole milk)
    140g white bread
    25g raisins
    25g sultanas
    568ml pot of custard (fresh if available)
    Butter
    6 tbsp caster sugar

Method:

1- This is so simple! Pre-heat the oven to 150C or 140C for fan oven (gas 1).

2- Put the custard into a large bowl and add milk, stirring slowly to combine.

3-Cut the crusts off the bread and discard then slice the bread into triangles.

4- Put the slices in a large bowl and scatter over raisins and sultanas.

5- Pour over the custard mixture and stir together with a large wooden spoon to gently coat all the bread pieces.

6- Using the a little butter on a paper towel or greasepaper, lightly grease an overproof dish and pour in the mixture.

7- Put it in the oven for 30-35 minutes until there's just setting in the centre. It should still be soft and a little wobbly.

8- Sprinkle sugar over the surface and place under a hot grill for a couple of minutes until the sugar starts to go golden and caramelise the top.

9- Leave it to cool before serving. It's great just slightly warm or cold.
Advice: I like it with a little double cream when I'm feeling indulgent.
