Chocolate and cherry muffins

Ingredients (serves 12):


Method:

1. Preheat the oven to 180°C (Gas Mark 6).

2. Mix the melted butter, egg yolks and sugar in a bowl. Add the flour and baking powder. Mix to obtain a smooth mixture. Beat the egg whites to a soft peak with a pinch of salt and add them.

3. Melt the dark chocolate in another bowl in the microwave and add 1/3 of the mixture. Keep 2/3 of the mixture in the bowl and add the white chocolate chunks.

4. Pour a layer of the white chocolate mixture into the muffin mould, add a cherry then the dark chocolate mixture.

5. Cook for about 20 minutes. Melt the remaining white chocolate in the microwave with a tablespoon of water and a tablespoon of cream. Pour over the cake and place a cherry on top. Refrigerate for 1 hour.
