White chocolate mousse

Origin of dish:  Exotic

Preparation time: 90 minutes
Cooking time: 40 minutes
 
Ingredients (serves 6):


Method:

1-Wash and brush the limes under hot water then dry them.

2-Remove the zest from one of the limes using a knife and cut into thin strips.

3-Add the zest to the boiling syrup, made from sugar diluted in a glass of water. Leave to cook for 7 to 8 minutes then drain.

4-Cut the chocolate into regular pieces and melt over a very low heat with the milk.
Add the rum, mix with a wooden spoon to obtain a smooth cream and take off the heat.

5-Whip the cream into the lukewarm chocolate mixture.

6-Beat the egg whites until stiff then add the juice of half a peeled lime.

7-Add the beaten egg whites to the previous mixture using a spatula.

8-Pour into a fruit dish or serving dish and place at the top of the fridge for 4 hours.

9-Shortly before serving, peel the second lime, getting rid of the white skin, and cut into thin slices.

10-Decorate the mousse with half a lime slice. Add a spritz of chantilly cream and sprinkle on candied zests.
Advice: Note the long 4-hour wait!
