Ingredients (serves 4):Method: Wash and remove the seeds from the peppers. Cut 4 peppers into small cubes.
Peel and chop the garlic and onion. Heat the oil in a casserole dish and add the garlic, onion and chopped peppers. Mix well and cover with 1 litre of water, crumble the stock cube into the dish and leave to simmer for about 30 minutes.
Leave to cool, add salt and pepper and mix altogether. Chill for at least 2 hours. Serve in the 4 remaining hollowed-out peppers, along with crème fraîche and chopped herbs, for a refreshing and traditional style summer soup.
