Cream of courgette soup

Ingredients (serves 4):


Method:

Wash and cut the courgettes without peeling them.

Put all the ingredients, including the cheese, in a pan.

Put a lid on the pan and cook for about 30 minutes.

Mix all together and serve.
Advice: Add more cheese for a thicker soup.

Dip some cherry tomatoes into this cream of courgette soup to make a tasty, filling starter. Use about 250g cherry tomatoes.
