Ingredients (serves 4):Method: 1. Preheat the oven to 200oC, gas mark 6.
2. Place the potato, onion, garlic, tomatoes, oil and pine nuts (if using) on a large baking tray and mix well.
3. Bake for 25 minutes, turning once during cooking.
4. Stir in the feta and cook for a further 5 minutes until the potatoes are tender.
5. Season to taste.
6. Serve hot.
