Ingredients (serves 6):
- 400g penne pasta
Method: Cook the pasta "al dente" in salted boiling water.
- 200g gorgonzola
- 150g Parma ham
- 1 handful of black olives
- 1 tablespoon shelled pistachios
- 2 tablespoons vinegar
- 6 tablespoons olive oil
- 1 bunch of fresh basil
- salt and pepper
Drain it, and pour over a dash of olive oil and give it a stir so it doesn't stick together.
Prepare the sauce in a bowl by mixing the vinegar and oil together. Add salt and pepper.
Add the pasta, diced gorgonzola, thinly sliced ham, pistachios and whole olives.
Sprinkle on some fresh snipped basil and serve.
