Ham and spinach rolls

Ingredients (serves 4):


Method:

Preheat the oven to 210°C (Gas Mark 7).

Melt the chopped shallots in 30g of butter. Add the spinach and leave to melt for a few minutes, with the lid on, then stir with a fork. Add salt, pepper and nutmeg. Leave to cook over a low heat for a few minutes.

Spread out the spinach on the slices of ham and roll them up to make rolls.

Place them in a greased ovenproof dish.

Make a bechamel sauce by mixing the flour with the melted butter over a low heat until it takes colour. Pour in the milk, stir and allow to thicken. Season with salt, pepper and nutmeg then add the juice of half a lemon.

Pour the bechamel onto the rolls and bake for 10 minutes.
