Ingredients (serves 4):Method: Pour the flour, salt and pepper into a bowl. Make a well. Beat the eggs with the milk and add to the well, little by little, to prevent lumps. Place the batter in the fridge.
Meanwhile, clean the aubergines and courgettes in cold water before finely grating them.
Cook the grated vegetables in a lightly-oiled frying pan to soften them a bit. Drain then add to a large bowl. Pour the batter over the top.
Peel and chop the garlic cloves before adding them to the rest of the mixture and mix well.
Cook the blinis:
For one pancake, pour the batter in a hot frying pan with a ladle and cook over a low heat for 15 minutes, without letting it take too much colour.
Cook as many pancakes as possible with the batter that you've got.
Once cooked, place the blinis on a plate with a slice of courgette on the top for decoration.
