Oyster Fritters

Origin of dish:  North America
Type of cooking:  Hob
Preparation time: 25 minutes
Cooking time: 5 minutes
Ingredients (4-6) :

    140 g flour
    1/2 teaspoon salt
    1 tablespoon melted butter
    1 egg, lightly beaten
    100ml beer
    24 shelled fresh oysters
    1 egg white
    vegetable fat or sunflower oil for frying


Sieve 70g flour and salt into a bowl and mix with a wooden spoon.
Mix in butter and beaten egg.
Add the beer and continue to stir until mixture is smooth - do not over-mix!
Leave batter to rest at room temperature for at least one hour.
Once ready to fry oysters, beat the egg white.
Carefully mix egg white into mixture.
Heat oil in chip pan to 400°F(200°C).
Dip oysters in flour, then batter.
Fry for 3 or 4 minutes.
Keep oysters hot in warming oven.
Drain oil from oysters onto paper napkins.
Serve with chuynks of lemon.
