Ingredients (serves 4):Method: Boil and peel tomatoes, remove seeds and dice.
Salt, then leave to strain for 15 minutes in a sieve.
Meanwhile, rinse and dry basil.
Peel and crush garlic.
Grate parmesan into a bowl, add tomatoes and mix together with basil and garlic.
Add olive oil little by little, stirring constantly.
Strain, serve onto plates.
Add sauce on top and serve hot.
