Ingredients (

1 kg ripe
tomatoes
4
cloves
garlic
3/4 litre
chicken
stock
2
onions
Salt &
pepper
8 leaves
mint
Fresh chopped
parsley
Method:

Wash, peel and seed tomtoes, then cut into quarters.
Peel and slice
onions
and
garlic
.
Brown the
onion
with a couple of chunks of
tomato
instead of butter or oil.
Add
stock
and rest of
tomatoes
.
Cook for 25 minutes, then blend.
Add parsely and
mint
leaves, as well as
garlic
.
Serve.
